In early 2022, former Chez Panisse intern Steve Joo opened Joodooboo, a California dooboo (Korean for tofu) & banchan shop, to high acclaim in North Oakland.
We are lucky to have the tofu Joo spent months perfecting in Korea for sale at the farmers’ market. The tofu is made of organic soybeans, and he uses reconstituted seawater in the place of commercial coagulant to give it its signature saltiness and pillowy texture. After you try it, you’ll want to check out his brick and mortar for the day’s banchan selection, which features produced sourced directly from the Berkeley Farmers’ Markets.
