After extensive research Emiliano Cecchetti and Mauro Bernocchi have discovered a way to create gelato with the freshest ingredients that is delicious, healthy, and light. Using local and organic dairy from Straus Farms and featuring organic fruits sourced from farms like Frog Hollow Farm, Riverdog Farm, Swanton Berry Farm, Lucero Organic Farm, and Kashiwase Farm their gelato and sorbets allow flavors to truly shine.
In their quest to make a healthier dessert they found that using fermented sugars instead of sucrose and glucose results in a not-too-sweet treat that is low on the glycemic index and they treat their dairy with the natural enzyme lactase to make it lactose-free and easier to digest.
