DIY Citrus Marmalade: Seasonal Preserving with Shakirah Simley
Tuesday | March 01, 2016 | 1:00 pm
Pollinate Farm and Garden | 2727 Fruitvale Avenue, Oakland, CA 94601
Marmalade season is upon us! Backyard trees and farmer’s markets are exploding with a plethora of beautiful citrus, and it’s time to preserve it for the year ahead. Join Pollinate Farm & Garden as we welcome expert preserver and Bi-Rite Market’s Canner-in-Residence, Shakirah Simley for a hands-on class as we tackle one of the trickiest preserves best done in a friendly group! Over 3 hours we’ll chop and juice, slice and simmer until we get lovely jars of tart and sweet fruit.
We’ll start with a citrus tasting to learn the best types for preserving and then get to work on preparing, cooking and jarring a commercial pectin-free marmalade. We’ll also enjoy a seasonal snack during our Q&A break. Participants will take home recipe packets, samples of our in-class concoctions and a boost of canning confidence. Bring a sharp knife, apron, closed toe shoes and canning questions (and a friend!).
Shakirah Simley is the Community Coordinator and Canner-in-Residence for the Bi-Rite Family Businesses. She wears a number of hats including: developing jams and preserves for its PUBLIC Label line, cooking instructor at 18 Reasons (its educational arm) and is in charge of giving and community outreach, with a penchant for programs that support youth empowerment and increase access to healthy food. Before arriving on 18th Street, Shakirah attended the University of Gastronomic Sciences in Italy on a Fulbright scholarship, where she received her Master’s degree and studied under Italian canners. She was recently named one of Zagat’s “30 under 30: SF Bay Area Up and Comers.” She loves to talk food justice, policy, jamming, school food and the perfect cappuccino.
