Simple Culinary Delights From Food Scraps

Join Chef Helga Alessio as she demonstrates the beauty, nutrition and flavor of “scrap” ingredients as you help to make and enjoy an entire meal!

Set aside 2 1/2 hours to prepare delicious food from “ugly” vegetables or fruit on the brink of certain demise. Learn with a culinary chef how to minimize waste in your kitchen. The pulp from freshly juiced carrots and beets will serve as the base for tasty veggie-burgers. Whipping up a dip will turn food scraps into flavorful bites instead of compost. Doomed pears and apples will turn into an autumn crisp in no time. We will have a small feast together. All vegetarian!

Depending on attendants participation and speed, the class will prepare up to five dishes.

A word from Chef Helga-

“Shocked by the amounts of wasted food as reported in National Geographic Magazine and local newspapers, while families and homeless live in a food supply crisis, I felt inclined to contribute my part beyond private endeavors. With the goal to improve on my nutrition I graduated from Bauman Culinary College in Berkeley eight years ago as a Healthy Chef, a life-changing experience! First a volunteer at Ceres Community Project in Marin, I later became an interim chef there teaching teen-chefs to handle 10″ knives safely to prepare meals for families affected by cancer. Recently I enrolled in a program run by Alameda County to train as a StopWaste Environmental Educator to combine my passion for nutrition with optimizing our precious resources.
