After a thorough introduction to the theory , safety issues, equipment and ingredients, we will put our new knowledge to practice and can up some seasonal organic high acid fruits and tomatoes with two failproof methods –the waterbath method and the inversion method. You will learn about jam, jellies, compotes, vinegar pickled vegetables sauces and salsa, no fail low sugar jams and some secrets about pectin. As an extra bonus we’ll demonstrate a quick method for canning juice that extends the bounty. Everyone takes home 3 jars of goodies.
